This was a first for me, trying Gluten-Free food.  I am not well educated on gluten so I had to tear out the investigating skills and dive in to learn more.  Here is what I learned from healyourlife.com:

What exactly is gluten? I like to keep the definition simple: It’s the glue that gunks up your gut, intestines, lymphatic system, sinus and joints. This, in turn, creates inflammation, which causes pain along with many of the health-related issues we are facing today including fibromyalgia, arthritis, asthma, ADD, autoimmune dysfunction, irritable bowel, all manner of gut issues, migraines and cancer. Oh, and did I mention that it makes you fat?

Ah ha, I see now why they would send me samples even though I have no health reason to eat a gluten-free diet.  Udi’s Gluten-Free was created by Chadwick White after being challenged to create a great tasting gluten-free bread.  That is exactly what Chadwick and his team of skilled bakers did.  Offering people with health conditions or health concerned folks like me a delicious alternative.

Review: I received a generous selection of Udi’s Gluten-Free foods:

  • Cinnamon-Raisin Bagel
  • Cranberry Granola
  • Millet-Chia Bread
  • and 2 Pack Pizza Crust

I really love the taste and size of the Millet-Chia Bread as it offered bold healthy taste and portion control.  I kinda felt important eating it..like I deserve to be healthy.  I am a huge Granola fan and Udi’s Gluten-Free Cranberry Granola offered flavor and health benefits such as 3 grams fiber per serving and only 7 grams of sugar and 120 calories.  It’s tasty enough to selfishly hide from your family, but be a good mom and share the health!  That is one BIG bagel.  The Cinnamon-Raisin Bagel is bakery quality without the unwanted guilt.  I ate halves-ies  and was satisfied.  And finally the grand finale: pizza.  Udi’s Gluten-Free 2 Pack Pizza Crust was ah-mazing.  These are perfect for you making your own personal gourmet pizza OR kids pizza’s.  It’s good, I’m just keeping it real.

Udi’s Gluten-Free Pizza Recipe

Ingredients

  • Udi’s Gluten-Free 2 Pack Pizza Crust
  • 1 can Great Northern Beans
  • 2 Garlic Cloves, minced
  • 1 TBLS Olive Oil
  • 1 package Sun-Dried Tomatoes, non-oiled
  • 1 1/2 cups fresh Spinach Leaves
  • 1/4 cup Scallions or Red Onions
  • 1 cup Mozzarella, freshly shredded
  • 1/4 cup Parmesan, freshly shredded
  • optional dressing: Balsamic Vinegar, Olive Oil

Instructions

  1. Rub a few drops of Olive Oil on pizza crust, sprinkle with sugar. Drain beans and rinse, add minced garlic and mash together until spreadable. Spread desired amount on 1 Udi’s Pizza Crust. Add onions and drizzle olive oil. Cut sun-dried tomatoes in strips and add to pizza. Top with freshly cut spinach leaves and mozzarella and parmesan cheeses. Bake at 350 degrees for 15 minutes or until cheeses are melted. Serve with or without dressing on top.
